About European perch
The European perch (Perca fluviatilis) is a freshwater fish of the perch family, found in lakes, rivers and ponds. It has a yellowish-green body with dark vertical bars, a spiny dorsal fin and orange pelvic fins. Perch is one of the most popular and highly valued freshwater fish, renowned for its white, sweetish and firm flesh. It should not be confused with ocean perch — these are different species.
Nutritional value
Perch meat is lean, rich in complete protein and low in fat. It contains vitamin B12, phosphorus and other minerals. Thanks to its mild flavour and low fat content, perch is valued in light diets and is suitable for people of all ages.
Fishing seasonality
The size and availability of perch may vary depending on the time of year and the fishing location. It is a seasonal fish, and fishing is affected by the spawning period in spring. The catch is often processed and frozen to preserve its quality.
Culinary notes
The firm white flesh of perch has a pleasant, sweetish flavour, which makes it valued in both simple and refined dishes. Perch is suitable for frying, braising, boiling and fish soup. Smaller perch are often fried whole, while larger ones are cooked as fillets. The mild flavour of the flesh is nicely complemented by butter, lemon and herbs.
