About ide fillet

Ide fillet is cut from the ide (Leuciscus idus), a freshwater fish of the carp family found in the rivers and flow-through lakes of Europe and Eurasia. The fillet is supplied without the backbone, scales or skin; a few small pin bones may remain. The meat has a soft yellowish tint, a medium-dense texture and a subtle freshwater flavour.

Nutritional value

Ide fillet is a quality source of lean protein. The fish is rich in complete protein and B vitamins, as well as phosphorus, potassium and selenium. Freshwater species contain less fat than marine species, so the fillet suits a lighter, balanced diet.

Fishing seasonality

Ide are fattest and of the best quality in late autumn and winter, before spawning, which takes place in spring. Fillet thickness and size depend on the age of the fish — larger fish yield thicker, more even portions that are easier to cook.

Culinary notes

The even thickness of the fillet allows it to be pan-fried, oven-baked or grilled, steamed, braised or smoked. The fillet pairs well with lemon, fresh herbs, butter, garlic and white wine. It is suitable as a filling for dumplings or for fishcakes, and for fish soups. Lightly scoring the fillet before cooking makes the small number of intramuscular bones less noticeable.
