About the product
Silver carp (Hypophthalmichthys molitrix) is a fast-growing freshwater fish of the carp family that feeds on plankton and microalgae. The fillet is cut from the lateral muscles: these are elongated, light-coloured portions of even thickness, free of large bones and convenient to place straight into the pan or the oven without further preparation.
Nutritional value
Silver carp flesh is lean, easily digestible and rich in complete protein. It contains omega-3 fatty acids, B vitamins and minerals — phosphorus, potassium and selenium. The fillet format allows portions to be weighed more precisely and calorie intake to be controlled, so it is suitable for dietary and children’s menus.
Texture and seasonality
The fillet has a tender, medium-dense texture and a moderate, subtle flavour. The fish are at their fattiest and largest in the warm season, when they feed actively; at that time the fillet is thicker and juicier. The even thickness across the cross-section ensures uniform cooking throughout the portion.
Culinary notes
The fillet is versatile: it can be pan-fried or oven-baked, stewed, steamed, grilled, or used for fishcakes and fish soups. It pairs well with lemon, dill, parsley, garlic, butter and white wine. Brief cooking preserves its juiciness — do not overcook, so that the flesh does not dry out.
