About African catfish
The African catfish (Clarias gariepinus) is a freshwater predatory catfish native to the rivers and lakes of Africa and the Middle East. Today it is one of the most popular aquaculture species thanks to its rapid growth and hardiness. The fillets are cut from the firm white flesh of this scaleless fish; the flesh separates easily from the backbone, giving portions of even thickness that are almost boneless.
Nutritional value
African catfish fillet is a source of lean, protein-rich meat. It contains plenty of complete protein, B vitamins and minerals. Compared with the European wels catfish, African catfish meat is leaner, which makes it suitable for lighter meals, while its omega-3 fatty acids complement a balanced diet.
Seasonality
As the African catfish is farmed mainly in closed recirculating aquaculture systems, the quality of its fillets remains consistent all year round, regardless of the season. It is a convenient option with predictable quality.
Culinary notes
The firm, mild-flavoured flesh has almost no distinctive fishy smell, which gives it broad appeal. The fillets are ideal for pan-frying or oven-baking, braising and smoking. The even thickness ensures uniform cooking. It pairs well with lemon, garlic, fresh herbs, butter and vegetable side dishes.
