About northern pike
The northern pike (Esox lucius) is a freshwater predator of the pike family, found in lakes, rivers and ponds. It has an elongated, torpedo-shaped body, a flattened snout and sharp teeth. Pike is one of the most highly valued freshwater fish, known for its lean, firm white meat. It is a freshwater species and should not be confused with hake, a marine fish.
Nutritional value
Pike meat is lean: it is rich in complete protein and low in fat. It contains vitamin B12, phosphorus, potassium and selenium. Thanks to its low fat content, pike is valued in light and dietetic eating.
Fishing seasonality
The size of pike and the quality of the meat can vary depending on the season and fishing location. It is a seasonal fish, and fishing is usually restricted by the spawning period in early spring. Caught fish are often processed and frozen to preserve their quality.
Culinary notes
The firm white meat of pike holds up well during cooking, making it suitable for braising, frying, boiling and oven-baking. In Lithuanian cuisine pike is traditionally used for fish soup, and it is also prepared stuffed or braised with vegetables. The meat contains bones, which should be taken into account. Sauces and richer accompaniments nicely complement the lean meat of pike.
