About zander
The zander (Sander lucioperca) is a large predatory freshwater fish of the perch family (Percidae). Its body is elongated and spindle-shaped, covered with small, rough scales; the back is greyish-green and the flanks are paler with dark transverse bands. Characteristic features are its sharp teeth and two dorsal fins, the first of which is spiny. Zander are found in Europe’s lakes, rivers and estuaries and prefer deeper, cleaner waters. Adults usually reach 40–70 cm in length and can weigh several kilograms.
Nutritional value
Zander meat is lean, white and firm in texture, valued for its delicate flavour and low bone content. It is rich in complete protein and low in fat, so it suits a light diet. The meat contains B vitamins, phosphorus, potassium and selenium.
Fishing seasonality
Zander fishing is most active in the cooler parts of the year — autumn and spring — when the fish feed intensively. Zander spawn in spring, once the water has warmed to about 10–15 °C. Fish size and meat firmness vary depending on the season and the body of water.
Culinary notes
The lean white meat is excellent for pan-frying, oven-baking or grilling, braising and steaming. The fillet does not fall apart, which makes zander popular in restaurant kitchens. It goes well with butter and lemon sauces, white wine, fresh herbs and seasonal vegetables.
