About Atlantic herring
Atlantic herring (Clupea harengus) is a small, schooling marine fish of the herring family, found in the waters of the North Atlantic and in the Baltic Sea. It has a slender, laterally compressed, silvery body. Herring is one of the most abundant and longest-used food fish, with deep-rooted traditions in the cuisines of Northern and Central Europe, Lithuania included.
Nutritional value
Herring is classed as an oily fish and is therefore a valuable source of omega-3 fatty acids (EPA and DHA). It is rich in complete protein, vitamin D, vitamin B12 and selenium. Thanks to its nutritional properties and availability, herring has long been an important everyday food fish.
Fishing seasonality
Herring is a seasonal fish whose fat content depends on the time of year and the feeding cycle. It is usually at its fattiest before spawning, when it has accumulated the most fat. Because of migration, the size and fat content of the fish may vary depending on the season and the fishing area.
Culinary notes
Herring is especially valued salted and marinated — this is the classic way of preparing this fish. It is used in traditional dishes such as herring with onions, in oil or in mustard sauce. Herring can also be smoked, fried or stewed. Its pronounced flavour is nicely balanced by onions, vinegar and spices.
