About the European plaice

The European plaice (Pleuronectes platessa) is a marine flatfish of the flounder family that lives on sandy or muddy seabeds. It has a flat, oval body, both eyes on one (the upper) side and bright orange spots on its brownish back. Plaice flesh is white, lean and tender, which is why it is considered one of the most delicately flavoured sea fish.

Nutritional value

European plaice is a lean fish, rich in easily digestible protein and low in fat. It contains vitamin B12, iodine, phosphorus and selenium. Thanks to its low calorie content and tender flesh, it is suitable for light and dietetic eating.

Fishing seasonality

The size, flesh quality and availability of plaice may vary depending on the season and the fishing area. The catch is usually processed and frozen quickly to preserve the fish’s delicate texture.

Culinary notes

Thanks to its thin, tender fillet, plaice cooks quickly. It is ideal for pan-frying or oven-baking, steaming and cooking with butter and lemon. Its delicate flavour pairs nicely with light sauces and herbs, so plaice is valued in both simple and refined dishes. Because of its delicate texture, the fish needs to be cooked with care.
