About Argentine hake
The Argentine hake (Merluccius hubbsi) is a marine fish of the hake family (Merlucciidae), found in the Southwest Atlantic off the coast of South America. Despite its Lithuanian name, which means ‘sea pike’, it has nothing in common with the freshwater pike — it is an entirely different species. It has an elongated, slender body and lean, delicate white flesh, which is why it is classed among the so-called white fish.
Nutritional value
Argentine hake is a lean fish, rich in easily digestible protein but low in fat. It contains vitamin B12, phosphorus, selenium and other minerals. Owing to its low fat and calorie content, it is valued in light and diet meals and is suitable for people of all ages.
Fishing seasonality
This fish is caught all year round, but its availability and size may vary depending on the fishing area and season. The fish is usually processed and frozen soon after being caught, which preserves its delicate texture.
Culinary notes
With its mild, neutral flavour and white flesh, Argentine hake is extremely versatile in the kitchen. It is suitable for frying, braising, steaming, boiling and oven cooking. The lean flesh readily takes on the flavours of spices and sauces, so it goes well with vegetables, lemon and a variety of dressings. This fish is particularly convenient for those who avoid a strong ‘fishy’ taste.
