About ocean perch

Ocean perch (Sebastes norvegicus), also known as redfish, is a fish of the deeper waters of the North Atlantic. It has bright pink or red skin, large eyes and firm, white flesh. It is a slow-growing species that has nothing in common with the freshwater perch — the two simply have similar names. Ocean perch flesh is valued for its mild flavour and easy-to-handle texture.

Nutritional value

Ocean perch is a relatively lean fish, rich in complete protein, vitamin B12, vitamin D and selenium. Its flesh is easily digestible, which makes it suitable for a varied diet, including light eating.

Fishing seasonality

As it is a slow-growing fish of deeper waters, its availability and size may vary depending on the fishing area and the season. The catch is usually processed and frozen quickly, preserving its quality.

Culinary notes

The firm, white flesh of ocean perch holds together well during cooking, so it is suitable for frying, stewing, steaming and oven-baking. Thanks to its mild flavour, it pairs nicely with lemon, herbs, vegetables and light sauces. The flesh is often supplied as fillets, which makes it convenient for quick preparation.
