About the Greenland halibut

The Greenland halibut (Reinhardtius hippoglossoides) is a large marine flatfish of the flounder family that lives in the cold waters of the North Atlantic and the Arctic Ocean. Unlike other flounders, it is regarded as a deep-water predator and is found at great depths. The fish stands out for its dark body, almost uniformly coloured on both sides, and its firm, dense flesh. It grows large, which makes it suitable for cutting into thick, even fillet portions.

Nutritional value

This is an oily fish, high in omega-3 fatty acids and protein, with vitamin D, vitamin B12 and selenium. Its rich, buttery flavour means even a small portion is satisfying.

Fishing seasonality

Greenland halibut is caught year-round in deep-water fisheries. The fat content and texture of the flesh may vary slightly depending on the fishing area and the season; in the colder period the fish is fattier. The size of the fish caught varies, so fillet thickness and portion size may differ.

Culinary notes

The thick, rich fillet is ideal for oven-baking, grilling or stewing: the flesh stays juicy and does not fall apart. Its fat content allows the fish to be smoked successfully. The delicate flavour pairs well with lemon, herbs, butter and sour cream sauces, as well as roasted vegetables.
