About northern shrimp

The northern shrimp (Pandalus borealis) is a cold-water crustacean of the true shrimp group (Caridea), living on soft seabeds at depths of 20–500 m. It is found throughout the North Atlantic and the Arctic Ocean, from Canada and Greenland to Iceland and Norway. Females grow to about 16 cm; males are smaller. Interestingly, it is a protandric hermaphrodite: young shrimp are males and later change into females. In cold water they grow slowly, so the meat is denser and sweeter.

Nutritional value

Northern shrimp are a lean, high-protein product. They are rich in complete protein and low in fat and calories, which makes them suitable for a light diet. They are a good source of selenium, vitamin B12 and iodine, and also supply omega-3 fatty acids. Their pinkish colour comes from astaxanthin, a natural antioxidant.

Fishing seasonality

Northern shrimp are fished year-round, but size and meat content vary depending on the region and water temperature. Shrimp from colder seasons are often denser and more aromatic. Commercial fishing is regulated by quotas to conserve stocks.

Culinary notes

Northern shrimp are usually already cooked, so they only need brief reheating; prolonged heat treatment makes them tough. They are ideal for salads, sandwiches, pasta and rice, or as a snack with lemon and garlic. They go well with dill, butter, spicy sauces and white wine.
