About ocean perch
The ocean perch (Sebastes norvegicus) is a slow-growing, cold-water North Atlantic fish of the scorpionfish family, with bright red skin and a stocky body. Its flesh is white, with a dense yet delicate texture and a mild, subtly sweet flavour. The fillets are cut lengthwise along the body, giving pieces of even thickness without the backbone that are easy to portion and to fry evenly.
Nutritional value
Ocean perch fillet is lean, high in protein and easily digestible. It is high in protein, with vitamins D and B12, selenium and iodine, and low in fat.
Fishing seasonality
Ocean perch is caught in the North Atlantic all year round, but it is at its oiliest and its flesh is densest in the cold season. The fish matures slowly, so commercial fillet portions are usually obtained from mature, larger specimens, which ensures intact, thicker pieces.
Culinary notes
The fillet is versatile: it can be pan-fried, oven-baked, grilled, braised or steamed. The thin skin browns nicely while the white flesh stays juicy. It goes perfectly with lemon, butter, herbs, white wine, roasted vegetables or a potato side dish, and is also suitable for fish soup and cream soup.
