About pangasius (striped catfish)
Pangasius, also known as striped catfish (Pangasius hypophthalmus), is a freshwater shark catfish native to the rivers of South-East Asia, particularly the Mekong and Chao Phraya basins. In the wild it grows up to 130 cm and can weigh more than 40 kg. Today it is one of the most important farmed fish — its meat is pale, soft and delicate in texture, and almost free of bones.
Nutritional value
Pangasius fillet is an example of a lean, easily digestible fish: it is low in fat and calories but rich in complete protein. The meat provides B vitamins (especially B12), as well as phosphorus, selenium and potassium. Its neutral flavour and low fat content make it suitable for light eating and a balanced menu.
Seasonality
Since most pangasius is raised in controlled aquaculture, its availability and quality remain stable throughout the year — unlike wild fish, which depend on the fishing season. The fillet is usually supplied quick-frozen, so its flavour does not depend on the time of year.
Culinary notes
Pangasius fillet is versatile: it cooks quickly in a pan, in the oven or on the grill, and can also be braised. Thanks to its neutral flavour, it readily absorbs marinades and seasonings — lemon, garlic, ginger, soy sauce. It goes well with rice, vegetables, and creamy or spicy sauces. Thin fillets are cooked briefly so that they do not dry out.
