About zander fillet
Zander (Sander lucioperca) is a large predatory fish of the perch family, living in fresh and low-salinity waters. Zander fillets are light, almost white portions without the backbone or large bones; the flesh is dense, so it holds together when cooked.
Nutritional value
Zander fillet is a lean, easily digestible source of protein that is low in fat. The flesh provides a full range of amino acids, phosphorus, potassium and B vitamins. Thanks to its low fat content and delicate flavour, the fillet is suitable for dietary and children’s nutrition.
Fishing seasonality
Zander is caught most actively in the cooler months, when the flesh is at its densest and tastes better. Fillet size depends on the fish — zander usually weighs 0.5–2.5 kg, so the thickness and weight of portions naturally vary.
Culinary notes
The even thickness of the fillet allows it to be fried, stewed, steamed or oven-baked without drying out. Its delicate, non-sweet flavour pairs well with butter, lemon, dill and white wine sauces. Portions without large bones are convenient in restaurants and at home.
